Sugar Free White & Dark Chocolate Chunk Cookies!

These might be my best cookies yet!

Dare I say they taste like toll house cookies?
Minus all the sugar! (+ a white chocolate twist! If you want a classic tollhouse cookie taste, omit the white chocolate chips).

Sugar is highly inflammatory and we want to be going into winter in resilient shape. Minimizing sugar is one of the best ways to do that!

Ingredients
1 stick of pasture butter
3/4 cup sugar free sweetener ( @swervesweetie or @lakanto are best in my opinion)
1 Egg
1 tsp Vanilla
1 1/2 cups of Almond Flour
1/2 tsp baking powder
1/2 tsp xanthan gum (or can use corn starch or guar gum)
A few grinds of pink or sea Salt
3/4 cup sugar free Chocolate & white chocolate chips (I used @lilys_sweets for both)

Preheat oven to 360F.

Melt your butter over the stove, once its melted pour over your sweetener in a mixing a bowl and mix until fully melted. Add the vanilla and your egg, mixing well. Then add in your almond flour, baking powder, xanthan gum and salt. Mix until well combined. Finally mix in your chocolate & white chocolate chips. Use a Tbsp to measure out and place on a parchment lined baking sheet. You should have 12 balls of dough going into the oven!
Bake for 12-14 minutes and enjoy!
