Honey Walnut Shrimp

1 bag of wild-caught shrimp

Bread coating for the shrimp:
1 cup gluten-free 1:1 flour (I used @bobsredmill)
3 eggs
3 Tbsp Honey (@beekeepers_naturals)
Salt to taste

Pull the tails off your shrimp, place them into a mixing bowl. Mix your eggs, honey, and flour together and pour over the shrimp. Mix until the shrimp is well coated.

Place in your air fryer and fry for 5 mins at 400.

The sauce:
2 Tbsp honey
1 tsp sesame oil
1 Tbsp coconut aminos
1/4 cup of water
1/3 cup of walnuts chopped.

Toast your walnuts over the stove in a medium-sized pan. Add honey, oil, and coconut aminos. Once the walnuts are toasted and honey is mostly melted, pour in the water, then add shrimp and toss until coated.

Enjoy with rice or noodles!
