Grain free, sugar free POP TARTS

Chocolate & strawberry frosted - the 2 best flavors in my opinion. 😏 It’s the strawberry for me. They’re SO GOOD I almost cried

Strawberry Filling
1 cup cut strawberries
1.5 tsp sugar of choice. (used @missjonesbakes smart sugar. Can use maple syrup, monk fruit, or coconut sugar)
1/4 cup water

The chocolate filling is @fourthandheart chocti

Dough:
4 cups @bobsredmill paleo flour
2 sticks butter - cold
Few grinds of salt
2 eggs

Frosting:
2/3 cups powdered monk fruit sweetener (or regular powdered sugar)
3 tsp mylk of choice
2 tsp vanilla
2 tsp coco powder

For the jam add everything to a small pot, allow it to come to a boil & simmer for 20 minutes. Once it’s thickened either mash it by hand or use an immersion blender to get it smooth!

Cube your butter & put it in the food processor or blender with the flour until it forms into a dough. Then add eggs & salt.

Separate into two balls, wrap it in parchment paper & flatten it into discs. Allow to cool & harden in the fridge for about 30 minutes.

Take the dough out of the fridge & roll it out until it’s about 1/4 inch thick. Cut off the ends to make a 20 cm x 20 cm square. Then cut vertically so that your squares are 6 cm wide, you should have 6 rows between both doughs. Now cut across in the middle at the 10 cm mark. This should give you 12 6 cm x 10 cm squares.

Fill half your dough with the jam or Chocti leaving about a 1/4 inch of space on the sides. Cover them with the leftover pastry squares & use a fork to crimp the sides together. Place in freezer to harden for at least 10 mins then bake at 375 for 17 minutes.

To make your frosting: Combine 1/3 cup powdered monk fruit sweetener, 1 tsp mylk & 1 tsp vanilla together until it comes together into a delicious thick frosting. This will go on the strawberry pop tarts.

For the chocolate ones combine 1/3 cup monk fruit sweetener, 2 tsp mylk, 1 tsp vanilla, & cocoa powder until it comes together.

Take your pop tarts out of the oven & let them cool completely. Once they’re cooled spread about 1 Tbsp of frosting on top of each pop tart & add sprinkles to the strawberry ones.
